As a core kitchen utensil for simmering soups and stewing, Stock Pots often face issues like burning on the bottom and boiling over due to their large capacity and wide heating area if operated improperly. These problems not only ruin the taste of ingredients but also increase cleaning efforts. Understanding the correct cooking methods can help avoid issues and make the process more efficient.
First, select a Stock Pot material suitable for the characteristics of the ingredients. For ingredients prone to burning, such as rice porridge and multi-grain soup, prioritize stainless steel pots with smooth inner walls or pots with non-stick coatings—these materials rarely trap food residues. For ingredients requiring long-term heating, like meat and bones, cast iron pots with even heat conduction are ideal, as they prevent local overheating that causes burning. Additionally, check if the pot bottom is flat; a warped or bulging bottom easily leads to uneven heating and should be replaced or repaired promptly.
Attention should also be paid to ingredient preparation details. If cut ingredients (e.g., potato or carrot chunks) contain excessive starch, rinse them with water in advance to reduce starch adhesion to the pot bottom. For meat and bones used in soup, blanch them first and then clean off the surface blood foam to prevent the foam from sinking and charring when heated. Furthermore, control the amount of water added reasonably: generally, the water should cover the ingredients by 2-3 centimeters, and the maximum water level should not exceed 2/3 of the pot’s capacity—this prevents boiling over when heating.
The heating stage is essential to prevent burning and boiling over. Begin by using high heat to bring the soup to a rapid boil. Once you see several bubbles forming, immediately reduce the heat to low for a slow simmer. While simmering on low heat, maintain the soup at a gentle boil, characterized by slight rolling on the surface without large bubbles overflowing. This ensures ingredients are fully cooked while preventing violent boiling and overflow caused by excessive heat.
Stir the soup appropriately during cooking. For starchy ingredients (e.g., porridge, sweet potato soup), gently stir along the pot bottom with a silicone spatula every 5-8 minutes to prevent ingredient particles from sinking and sticking. For fatty soups, occasionally skim off surface oil to reduce the risk of overflow from accumulated oil and foam. If covering the pot for simmering, slightly leave a gap in the lid to allow steam to escape slowly—this avoids excessive internal pressure that pushes soup out from the lid edge.
Moreover, avoid frequent lid opening. Each time the lid is opened, the pot temperature drops sharply, prolonging cooking time; cold air entering also tends to make the soup boil more violently. To check ingredient doneness, observe the steam from the lid gap or quickly open and close the lid.
If slight burning occurs, turn off the heat first, move the pot to a cool place, and after the temperature drops slightly, gently scoop out the unburnt soup on top—avoid stirring to prevent burnt residues from spreading. For residues stuck to the pot bottom, soak the pot in warm water for 10-15 minutes to soften the residues, then clean with a sponge. Never use hard steel wool, as it may scratch the pot’s inner wall.
In case of boiling over, immediately turn off the heat, move the pot away from the fire, and wipe up the spilled soup with a cloth (take care to avoid burns). After the soup cools down, pour out some to reach a safe water level before reheating. If boiling over extinguishes the gas stove flame, first turn off the gas valve, clean the soup on the stove surface, and re-ignite only after confirming safety.
Mastering the above correct operation methods for Stock Pots not only helps avoid burning and boiling over but also improves soup taste, preserves nutrients, extends the pot’s service life, and makes kitchen cooking more efficient and enjoyable.
